Today on my lunch break I ran over to a local market and with not much to chose from I grabbed something green on the discount shelf or the, ‘I’m about to expire but still totally edible’ shelf.  When I got back to the office I opened up my mystery lunch to find what ended up being the most amazingly simple delicious lunch.  Crispy broccoli baked with pepper and parmesan cheese.  I honestly couldn’t wait to get home and make it for dinner.  I did, and it was super easy.

I thought I would post this recipe to share it with everyone.  There are so many variations you could try with this, but just the basic is great too.

  • 1 bunch of broccoli cut in halves
  • 1-2 tablespoons of olive oil
  • Shaved parmesan cheese
  • Salt and pepper

Put the broccoli on a pan in a single layer.  Drizzle olive oil over the little trees and add fresh ground pepper and sea salt.  Throw them in the oven (not literally) at 400 degrees for 15 minutes, or until a little browned.  Take them out and sprinkle cheese on them.  Put them back in for 5 minutes or so and voilà, done!

Now if I could just get the toddler to agree…
